Decades of well documented research have shown that the Western diet, rich in animal products, is detrimental to our health. We know that raising animals for food is contributing to climate change. The Earth Friendly Dining committee is committed to educating residents and staff about plant-based diets, what they are, and how they benefit humans and the planet. Our ultimate goal is to persuade Riderwood to offer at least one low fat, high fiber plant-based meal in every venue every day. Meanwhile, we are trying to facilitate earth-friendly eating on campus through sharing of ideas, recipes, places to buy ready-made vegan and vegetarian items, and holding vegan potlucks in residents’ apartments.
